Light and fruity, our white port
is a wonderful change of pace from heavier red ports. The
typical flavors of Pinot Gris shine in a new light when joined
by some additional sweetness. It goes wonderfully with creamy
desserts that might be overwhelmed by a late harvest or ice
wine.
Food pairings: Dessert! Especially creamy desserts,
with or without fruit: cheesecake, creme brulee, ice
cream. Ohhhhhhhhh yeah.

Sauvignon Blanc the way it should
be: crisp, clean and refreshing, with a clean, dry finish
- like sheets from your favorite fluff-n-fold. A sauvignon blanc in the Bordeaux style, with loads of crisp green apple fruit and without a ton of alcohol. Sip it all afternoon!
In 2006 I finally figured out how to get my Sauvignon Blanc picked at the ripeness I needed in order to make a classic Bordeaux style instead of the fat, high-alcohol style that is typical of Washington. We picked on August 18 - first on Red Mountain, and as far as I can determine, first in Washington. As a result, the 2006 stands in marked contrast to our 2005 and other prior vintages. The lower alcohol really lets the fruit shine through, and the fruit is more green apple and grapefruit - deliciously refreshing.
Food pairings: green apples & brie, oysters, fish, shrimp, salads
