Grandpa's Norwegian Meatballs

Grandpa's Norwegian Meatballs

Ingredients

  • 1 pound ground veal
  • 1 pound ground pork
  • ½ yellow onion, minced
  • 2 egg yolks
  • 1 cup bread crumbs
  • ½ cup milk or half & half
  • 1 teaspoon ground mace 1 T. salt
  • 1 teaspoon black pepper
  • 1 quart beef broth or stock
  • 1 Tablespoon flour mixed with 2 Tablespoon water. Oil, as needed

Instructions

  1. In a mixing bowl, combine all ingredients and mix well with your hands. Form into 2-inch diameter meatballs and set aside.
  2. Heat a little oil in a medium skillet over medium heat and brown each meatball evenly, rotating so all sides are browned. Transfer meatballs to a baking dish and add beef broth. Cover with foil and bake at 375º F. approximately 1 to 2 hours, or until fully cooked and tenderized. Let cool slightly, and remove meatballs from the broth. Strain broth, and transfer broth to a medium-sized saucepan.
  3. Bring broth to a simmer over medium heat. Whisk in flour and water slurry, stirring very well to avoid lumps. Cook until well thickened but still gravy-like.
  4. Season to taste with salt and pepper.
  5. Serve with meatballs and Ratio Rosso!
