Dungeness Crab, Mango & Avocado Salad

Ingredients

Dressing
  • 3 Tablespoons orange juice
  • 1 Tablespoon fresh lime juice
  • 1 Tablespoon honey
  • 1 teaspoon orange zest
  • 3 Tablespoons olive oil
  • Kosher salt & fresh-ground black pepper to taste
Salad
  • 1/2 red onion, shaved paper-thin on mandoline, soaked in ice water ~30 min. then drained well
  • 1 pound chilled fresh Dungeness crab meat
  • 1 large mango, peeled, pitted, sliced
  • 1 large avocado, halved, pitted, peeled, sliced
  • 12 large Bibb lettuce leaves
  • 1 Tablespoon chives, thinly sliced, for garnish

Instructions

Dressing
  1. Combine the first 4 ingredients in a small bowl; whisk in oil.
  2. Season dressing with salt and pepper.
  3. Mix in onion; let marinate for 15 minutes.
Salad
  1. Combine chilled Dungeness crab meat, mango, and avocado in a large bowl.
  2. Gently fold in the dressing.
  3. Overlap ends of 3 lettuce leaves in the center of each plate, forming a bowl.
  4. Mound crab salad in lettuce bowls, sprinkle with chives, and serve with Ratio Blanco!
